I am getting ready as soon as I finish writing this. I made my cookies last night after I found a post last night that advised to use mayonnaise in the place of eggs in cookies. They taste fantastic but the mix doesn't stay together. eggs act as a binding agent in meatloaf and patties in general. My mother would make us corned beef patties in Tonga because fresh meat besides lamb was not readily available. Local stores carried tin fish, New Zealand corned beef and lamb. It's why I love bbq lamb. It is the best!!! My mother also made us fish patties which were alright but I liked the corned beef patties better.

So many people can kill their own pigs and chickens that it is never sold at the stores. Eggs were sold at stores too. Beef was not common and we only had milk from Liahona when we lived there. There is a Tongan ice-cream factory but you don't see cows anywhere really. I never really thought about that. It must have been so hard for my mother to have to cook in Tonga.

I used 3 Tablespoons of mayonnaise instead of 2 eggs. The mix didn't bind together so instead of dropping by spoonfuls I formed balls. They taste very good. I used the recipe on the oatmeal container. I am trying this recipe again with raisins and eggs!!!
